Hi everyone! Sorry for a post that’s a little later than what I will typically post. A goal of mine is to get a consistent posting time but I’m still learning everything so we will see what happens.
Last night, my boyfriend’s brother and his fiance came over to our apartment for dinner. They were out first official dinner guests after moving in about 3 weeks ago. We decided to do a taco bar with all of the fixings. Sounds a tad adventurous for someone who is still working on perfecting recipes but it went well! I made both chicken and beef tacos but luckily the chicken was made in the crock pot so I had that cooking while I was at work all day.
They came over a little before 7 so we had some chips, salsa and guacamole while we chatted over drinks. Around 7:45 or so I figured it was probably time to start cooking the beef. I put the ground beef in the pan to brown while I assembled the ingredients. My favorite part of tacos is that although they have a lot of ingredients, it’s pretty easy to get everything ready since chopping doesn’t take too long. I got the lettuce, cheese, tomato, sour cream, salsa, avocado into bowls while I cooked the beef and Mexican rice. I added some of my trusted taco seasoning from Costco (thanks for the seasoning Dad!) once the meat was cooked and let that simmer while I got out the hard and soft shells for everyone. Once the beef was done simmering, I shredded the chicken then it was time to dig in!
The taco bar was a great idea for a group of 4 since it was easy to make, plus who doesn’t love tacos right?! We all had lots of tacos and chatted for a while before we cleaned up. Although my boyfriend, Alex, and I bought ice cream for dessert no one really wanted it and decided to continue talking over drinks while some music on.
This is where fun started to get in the way. We all had plenty of drinks and eventually some dancing ensued. I was dying of laughter and thought I was going to pee myself I was laughing so hard. Thankfully I had my phone close and took some videos that were so funny to watch this morning when I woke up.
I got up this morning and had planned on getting a run in but my pounding head told me that it wasn’t going to happen so I decided to listen to my body and just skip. I knew I wouldn’t feel good during the run with such a bad headache cough*hangover*cough but oh well. I had fun and can always get a run in tomorrow.
Alex and I ran to his parents house to store my bedding from college so that if we decide to move to a two bedroom apartment in the future we don’t need to buy any guest bedding right away. After a few more errands, which including driving all over Central New Jersey to find a music store for guitar strings, we were hungry. Alex said he wanted McDonald’s when we woke up that morning and I felt like some grease could do me good so to the golden arches we went! We don’t like to eat fast food that much but we felt like it was okay today since fries were just what the doctor ordered for me.
Once we got home, my headache was still there so I decided to watch some Netflix in bed hoping to fall asleep. Luckily it worked and I woke up feeling refreshed with no more headache! Now I’m off to get clothes ready to donate. Have a good rest of the day!
