Happy Wednesday! Today I wanted to share a simple pork tenderloin recipe.
Alex and I tend to eat either chicken or ground beef. Not that there is anything wrong with that but sometimes it gets a little boring. A few weeks ago, I picked up a pork tenderloin from the grocery store and put it in the freezer. I thawed it yesterday while at work for dinner later.
My dad found the recipe a couple of years ago. It actually calls to wrap it in bacon but that’s a little more decadent for a week night meal. Don’t get me wrong I love it both ways! Without the bacon, this recipe is so easy and yummy! I feel like this would be super easy to make and serve at a dinner party because it tastes like you put a ton of effort into it. To complete the meal, I roasted some broccoli and potaotes for our sides. as well. All this meal takes is an oven and some spices that you probably have in your cabinets already.
While dinner cooked I sat on the couch and read my book while sipping on my favorite seltzer. I don’t have a favorite flavor and just rotate between a couple of them. Once dinner was ready, I put out our salad bowls and voila! Dinner was served.
