A Hot Run + An Easy Buffalo Chicken Recipe

After work, I was itching to get out and run. I was kind of surprised by that since it was 90 degrees when I was out running. I had 2 miles on the schedule with the first 0.5 mile at an easy pace with the rest at an 8:30-8:45 pace. I didn’t hit my pace but it’s okay. That happens sometimes and I’ve learned to not beat myself up about it! The heat really got to me today and I just told myself that by running hard and pushing through in the heat would make my races in the fall feel a lot easier.


When I got home I ate a huge bowl of watermelon. Post run, I either drink a ton of water or have a snack. Watermelon gave me the best of both worlds with less clean up. Since I was dying, I honestly hate the watermelon straight for the big tupperware that’s currently in my fridge.


Alex prepped our dinner before he left for work this morning. I was going to do it but that was before I decided to lie in bed an extra 5 minutes instead of getting up this morning. I am a HUGE buffalo chicken fan. Whenever I don’t know what to eat at a restaurant, if buffalo chicken is on the menu there’s a 99.9% chance I will be getting it. For dinner, he put two chicken breasts in a crock pot with some hot sauce and Ranch dressing mix.

When we started to get hungry, I chopped up some potatoes to roast along side broccoli. It was such an easy and yummy dinner! I love making crock pot recipes because I tend to have leftovers so I’ll get two meals with barely any effort. I have a small crock pot. I no longer have the box but I’m pretty sure it’s 1.5 quarts but don’t quote me on that. I seriously love having one and I know that in another year or so I’ll probably upgrade to a bigger one.

We finished our night off with a little bit of reading on the couch while it got dark outside. Does anyone else wait for the sun to set before watching movies? We finished Harry Potter and now we can start the first movie based on the seventh book. I’m kinda of sad our marathon is going to be ending soon.

Crock Pot Buffalo Chicken

What you’ll need

2 chicken breasts, frozen or thawed (I use frozen and never have issues with them not being cooked)

Frank’s hot sauce

Ranch dressing mix

Directions

Place the chicken breasts in the crock pot.

Pour some hot sauce over it. You can eyeball it but I typically do about 1/2 – 1 inch on the bottom.

Sprinkle some of the ranch dressing mix over the chicken.

Turn the crock pot on low and let it cook all day.

About 20 minutes before serving, take two forks and shred the chicken in the crock pot. This let’s the chicken soak up a little more of the hot sauce.

**I don’t like ranch dressing and I can’t taste it in this dish**

  1. I CAN’T WAIT FOR FALL RUNNING! I’m so tired of the heat πŸ˜‰ Great job on your run, you still got out there and did it, which is awesome!
    I will probably go out and buy a watermelon today, yours looks delicious!
    And thanks for sharing the buffalo chicken recipe for the crockpot! My husband has a huge crockpot obsession…we had 5 at one point and I made him give one away – so now we have 4 (3 large and 1 small).
    I use the crockpot a ton during the colder months: corned beef for reubens, pulled pork, chicken noodle soup, chicken fajitas, pot roast, chicken alfredo…the list goes on πŸ™‚

    1. Fall running is the BEST!! I can’t wait for then since I consider that my perfect running weather, even though that doesn’t really exist πŸ™‚
      Go get a watermelon! I always feel a little crazy buying one since I’m the only one eating it, my boyfriend doesn’t like it for some reason, so I probably have to finish it today so it doesn’t go bad. Challenge accepted right πŸ˜‰
      5 crockpots is crazy but I approve of it hehe. Pulled pork is on my list of recipes to make in it! I also want to try Italian beef in it when it’s colder out.
