Happy Monday! I hope everyone is ready to tackle the week. Have a great day 🙂
Yesterday started off well. Saturday night I could not fall asleep for the life of me. I watched “Gilmore Girls” fully in bed and even that didn’t help. It was crazy! Normally I fall asleep within 20 minutes of getting in bed and it wasn’t until almost 1 am that I finally fell asleep. Somehow I only slept until 7:30.
For breakfast we made pancakes and bacon! It was quite tasty since it was salty and sweet. I like to dip my pancake pieces into a little maple syrup. This is the pancake mix I bought at the grocery store which according to Alex is the wrong kind. Who knew there were different varieties of Aunt Jemima’a original pancake mix!
I showered and got ready for the day. It was kind of a weird day to start. At first I thought I was going to take the train to New York City to meet my neighbors from Chicago that were on vacation here. But that fell through. Then Alex and I were supposed to go to a barbecue but that was also cancelled.
I read on the couch for a while before it was time for lunch. I roasted a small potato and made a grilled cheese because I had been wanting one since Saturday. As you can see, I managed to burn the grilled cheese *cries* it was so sad lol. I have never burned a grilled cheese so I blame it on the pan 😉
The rest of the day was spent watching Gilmore Girls while doing laundry and some more reading. I’ve started to realize that I don’t do very well when at home all day. I definitely enjoy being out for some part of the day, even if the outing is to the grocery store. I almost get some cabin fever when I’m stuck inside too long. I started to get a little restless (read as I got very bored) as it got later in the day.
Since our initial plans got canceled, Alex and I went to his parents house for dinner. We had steak, corn on the cob and grilled caesar salad. If you have never grilled lettuce you should definitely try it! It’s super easy to make too. All you need to do is cut Romaine hearts in half, brush a little olive oil on then season with salt and pepper. To grill, place the cut side down and cook until the cut side has a little char on it. They don’t take a while to cook so do it right before you eat.
Even though we got home before 9, Alex and I got side tracked and ended up not watching Game of Thrones so I think that’s what we’ll do tonight after dinner. I usually read some Buzzfeed articles on the episode during lunch so self control will be a must so I don’t spoil anything.
