Saturday started off with a 5 mile run. I had different paces for different miles and kept forgetting them. So before I left, I grabbed a sharpie and wrote the times on my hand! It was nice and easy to see since I could look at my pace and see what I should be at.
When I got home I showered and got dressed…after lying on the ground for 20 minutes drinking water 😉 Does anyone else do that? I find myself doing it post run when it’s hot outside. The temperature wasn’t too bad but the humid seemed high to me!
We had plans with friends of ours and we decided to bring some dessert with us. I found a recipe for graham cracker chocolate chip cookies on Facebook close to 2 years ago now. To me, they’re better than normal chocolate chip! I spent the afternoon baking.
Once the cookies were done I got comfortable on the couch and finished “Big Little Lies”. So. Dang. Good. I loved it! “Big Little Lies” follows three women who have children in the same kindergarten class. Two are old friends but one is a single mom that’s new to town. The entire book was engaging and I flew through it. My grandma and I text each other book recommendations so I sent her this book. She responded that she read it last year! This happens all the time with her so I think I need to step up my game!
For dinner, we went to our friends apartment. They get Hello Fresh and made one of those meals for us. The cauliflower pancetta mac n’ cheese was really good!! I wish I got the recipe but forgot to ask 😦 After dinner, we chatted for a bit before playing a game. They introduced us to Catan. Alex and I had never heard of it but really liked it! We might be picking it up to add to our game night rotation. While playing we ate the cookies. It was a really fun night and great to catch up with them.
Graham Cracker Chocolate Chip Cookies
Original recipe from Get In My Belly.
1/2 cup butter, room temperature
1 cup brown sugar
2 tsp vanilla
1 1/2 cup graham cracker crumbs (One sleeve crushed is 1 1/2 cups)
3/4 cups all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips
Preheat oven to 350.
In a bowl, cream butter and brown sugar together.
Add the egg and vanilla, mix until well combined.
In a medium bowl, mix graham cracker crumbs, flour, salt and baking soda.
Gradually add to the butter mix until just combined.
Stir in the chocolate chips.
Grease baking pan with cooking spray.
Bake for 7 minutes. They may look underdone but they will be perfect once they cool!
