I went back to my overnight oats. These may be one thing I will never tire of. I combine oats, some milk, chia seeds, and peanut butter in a container and mix before setting in the refrigerator for the night. Before eating, I add a splash of milk so that it’s a little less thick. I ate it while finalizing yesterdays post.
After work, I had a tempo run on the schedule. The last tempo run I had was really tough mentally so I thought positively about it all day. This week I had 3 miles instead of two at slower paces than last time and a slightly longer recovery. When I was done, I was glad I was positive all day. I think tempo runs will always be a little harder for me mentally than other runs and that’s okay.
For dinner I tried making meatballs for the first time. I don’t typically eat meatballs but I was in a little bit of a meal slump and figured why not try it out. I took some ground beef with bread crumbs, pepper and a little bit of cheese before cooking them in a pan. Not going to lie, some parts got a little more charred than others but for a first time I didn’t think it was that bad! I paired them with meatballs and marinara sauce (for Alex) and pesto for me.
We like to watch stand up comedy at night so we went to Alex’s parents house to pick up a DVD of some comedians. It was called the “The Blue Collar Comedy Tour”. The main reason we watched it was for Bill Engvall. I had never watched any of his standup or even heard of him until last night. He was so funny! I really liked him because it was all clean humor. After we finished, I felt tired so I cuddled up in bed for the night.
Question of the day: What’s your favorite pasta sauce? Pesto has slowly become my favorite.
