Another Night Another Fire

I’m starting to miss having smoothies with my breakfasts, especially since the weather is getting back into summer like temperatures this week. After I was ready for work, I scrambled an egg and paired it with a Greek yogurt. The Oikos Triple Zero brand is my favorite and the healthiest Greek yogurt I’ve seen since there is no artificial sweeteners and barely an sugar in it.

Yesterday marked the last of the turkey that was in the fridge. I made my final turkey, cheese and ham sandwich for a while. It seemed like some people in our corporate offices were out yesterday since it was kind of slow. Sometimes I like slow days, other times I hate it. I was closer to the “I hate it” end of the spectrum yesterday since the hours seemed to drag on but it happens. Not everyday is going to be fast paced right?

With the slow workΒ day I was ready to go run after work. As I was going to the garage door, Grace and Annie started to get excited that I was taking them on a walk. Unfortunately my speed work out wouldn’t have been very conducive to a dog with bad hips and one that’s 12 years old. My workout was tough but I felt good after. When I was on the cross country and track teams in high school, I hated speed workouts but now I love them. 3.45 miles including the warm up and cool down. With the warmer temperatures I really worked up a sweat in a short amount of time.

I was in big need of a shower when I got home. If you follow me on Instagram, you might have seen my story showing this but Annie decided to follow Β me up on the way to my shower. Grace wasn’t too sure about it but that’s okay. They are the cutest dogs and it will be hard to leave them later this week.

When I had my pjs on, I went down to start getting dinner ready. I cut up potatoes and broccoli to roast and got them in the oven. On Saturday, I cut up some chicken breasts and put them in a marinade to make spiedie’s. Spiedie’s are a sandwich from upstate New York that involves marinating meat (pork or chicken) for days and then grilling before placing on some good Italian bread. My Dad grew up in Binghamton, New York so he grew up with these and gets the marinades every Christmas from one of his brothers. Even if you don’t want to make a spiedie, the marinades from Lupo’s are delicious and they can be shipped to you. I highly recommend checking them out. Aside from the bread not being the best (it was too small) the meal was delicious.

Alex and I were talking about whether it was a bonfire night or hang out and watch tv kind of night. One check of the weather and we knew it was probably the last night to have a bonfire before his parents come home. New Jersey is supposed to get rain from Hurricane Jose today and tomorrow and we wanted at least one more bonfire. I had a glass of white wine as well. It is so calming to just sit outside and relax a bit at the end of the day. We let the fire burn out before heading inside to watch one episode of “Arrested Development” then headed up to bed.

  1. That chicken meal does look really good!! I only know how to throw things into a skillet for a few minutes, so it fascinates me to see what people who actually know how to cook can create. πŸ™‚

    Fave workout = tempo runs and hill workouts. They can be intimidating, and I haven’t gotten to do either in a while, but hopefully I will soon!

    1. It’s so easy to make! I’m not a great cook at all but I love adding spices or using marinades to make it look like I know what I’m doing πŸ™‚
      Tempo runs are slowly growing on me. I don’t live near hills so I don’t do too many hill workouts. I hope you can do some of these workouts soon too Natalie. Have a fantastic Tuesday πŸ™‚

      1. I was more about the cardio when I first started working out, but now I definitely enjoy lifting and strength a lot more. Any activities you love are good in my book though. Hope you have a great day as well!

    1. The days have been warm but the nights have cooled off which is perfect for the fire. Kimber is such a cute dog!
      Leg dog is the best until I get sore then can barely walk without pain lol.

    1. Girl I feel you! My boyfriend and I have a little deck on our apartment and don’t have a fire pit. We’re spoiled right now since we are house and dog sitting for his parents so we’re taking advantage of their fire pit.

    What kinds of marinades do you use for those chicken sandwiches? Also so jealous of your bonfire. I haven’t had a good bonfire night in wayyyy too long!
    Speed workouts are probably my favorite workout to do…mostly because when you run faster, you finish quicker! Since I’m still healing a stress fracture, I haven’t pushed speed lately and probably won’t for a while, so instead I am enjoying my lap swimming:)

    1. Hi Kerri! So the exact marinade that I used last night is from the company Lupo’s (I’ll respond in the morning with the exact link I’m on my phone and can’t right now) but my dad has done it with just normal Italian dressing. The key is letting it marinade for a day or two before cooking. The chicken gets SO tender!
      I’m sorry you’re dealing with a stress fracture right now but it’s great you’re keeping up with workouts by swimming laps. Swimming makes me so tired, such a great workout. Enjoy your night πŸ™‚
