Happy Thursday! How has your week been? I’ve been feeling both productive and lazy this week which is odd but I’m getting stuff done so who cares! Have a lovely day 🙂
The mornings seem to be staying chilly around here which is fine by me. I enjoy a little chill when I head out to work. Chilly temperatures are steering me towards having oatmeal for breakfast. Alex and I don’t have a microwave in our apartment so I tried making it on the stove. I followed the directions but it didn’t stay as warm for as long. Maybe I cooked it wrong? Not sure but oh well. It was tasty and filled me up. I topped it with some peanut butter and lots of cinnamon. A mug of cranberry green tea helped warm me up and distract from the somehow cold oatmeal.
Work flew by which was fine by me! I’m soaking in all the time I have with my boss so I can pick his brain and ask a million questions before he leaves. My team is actually based in Detroit which is why I was out there last week for training! Since I was in Michigan last week, my boss came here this week. I stuck with my usual peanut butter sandwich for lunch.
After work, I changed quickly before heading out for an easy 4 mile run. It was my first run since my race Sunday and my legs felt great! The temperatures were in the 60s so it’s almost time to break out capris and long sleeves. I can’t wait although I’m sure I’ll regret saying that when its about 10 degrees and snowing on a run in a few months.
Alex had another work event in the city so it was just me for dinner. Poor guy has been working crazy hours this week because of at least one event every day. Although I won’t complain since I can make all of the roasted potatoes for dinner that I want. Alex is convinced I like potatoes more than the typical person. To give dinner a little more substance, I added a tortilla pizza. Tortilla pizzas are something I’ve had for as long as I can remember. You just take a tortilla, spread a tiny bit of olive oil for the sauce, put some mozzarella cheese on, sprinkle some basil and add whatever toppings you have. It’s the best on the grill but I just used the oven since that’s what I have. So yummy!
Confession time, I could totally eat peanut butter all day and never be sick of it. Since Alex has barely been home this week, I said I would pull out his clothes for our trip to Knoxville this weekend. Last night I pulled it all together for him so that all he has to do is approve what I picked and then pack it into our suitcase. Originally I just planned on doing his stuff but I was on a roll and started mine to. Then I got hungry and stopped to take a break and eat an apple with peanut butter. So if you’ve been counting that makes 3 out of the 4 times I’ve eaten today that involves peanut butter. Can’t stop, won’t stop!
I spent the rest of the night watching “Friends” and doing random things around the house. It was one of those times where lots of little things got done because I was
avoiding cleaning my clothes off the bed feeling productive 😉
Question of the day: What’s one food you can eat all the time and not get sick of? For me, it’s peanut butter.
