Bread, Roasted Potatoes And Wine

Happy Friday Eve! This week seems to be flying by thanks to having Monday off. Does anyone else feel that way? Have a great day ๐Ÿ™‚

The forecast called for about an inch of snow overnight so I was pretty surprised when I woke up and saw no snow on the ground. Somewhere between the time I turned away from the window, showered, dressed and ate breakfast, it snowed. The inch came down pretty quick! Although it did make driving near the farms kind of whimsical. Normally I don’t enjoy driving to work in the dark but if there’s a little snow and a slightly grey hue out then I’ll take it.

During lunch, I read more ofย “The Marriage Artist”ย while enjoying my usual lunch. Does anyone else eat the same thing during lunch at work? For me that’s a peanut butter sandwich, carrots, hummus and pretzels. I’m really enjoying this book so far! It follows a widower, Daniel, in the present day and his quest to figure out why his wife and her could be lover were found dead next to each other. I’m about 2/3 of the way through and can’t wait to see how it links to people in World War II Vienna. It’s definitely a book that takes some more time to read but I don’t mind that.

After work it was just me. Alex had a work event in Philly last night so I had some me time. I read on the couch, prepped for the next day and made dinner. I amped up my usual roasted potato dinner by having a glass of wine and some bread. I dipped the bread in olive oil with some pepper, parmesan cheese, and just a splash of balsamic. If you’ve never tried oil in bread with some balsamic vinegar, I recommend it. Total game changer. While I ate, I watched “Gilmore Girls: A Year in the Life” on Netflix.

Once I cleaned up from dinner, I decided to try a new face mask. While at Target on Sunday, I found a display for the brand Formula 10.0.6 near my face wash. This is a new to me brand and the packaging sucked me in since it was so colorful. The products looked nice and when I saw a clearance sticker on this face mask, I decided to give it a try. My skin felt so nice after and it had such a pleasant scent while on my face. I can’t wait to use the mask a few more times to see how my skin reacts and then look into more products the brand has. Alex got home shortly after I washed the mask off and we hung out a bit before heading to bed.

  1. Oil and bread are my FAVORITE! I’m pretty sure I could eat it for every meal and be happy. When it’s just me for dinner I usually have a smoothie (when it’s warm) or an easy pasta dish. Or leftovers. Keeping it simple over here!

    1. I could too! It’s so satisfying to have bread in oil for whatever reason. I’m sure that I’ll have smoothies once it gets warmer. Pasta would be great but I always make way too much. Although then there’s leftovers so it wouldn’t be the worst lol. Simple is best in my opinion Erinn!

  2. When it’s just me for dinner I’ll usually get a takeout burrito- lol! If I’m at home and don’t want to go out, it’s a black bean quesadilla. The Hubs doesn’t like Mexican as much as I do, so I take advantage.

    1. I had never had it until at an Italian restaurant over the summer. No idea why I didn’t enjoy it again until last night.
      That’s smart! I should get food Alex doesn’t usually enjoy next time it’s just me for dinner.

  3. Hah, I totally had the same thing with the snow! I drove to Crossfit in the morning and there was no snow on the ground. Left my Crossfit gym and it was like someone had emptied a large bucket of snow on New Jersey. So strange!

    Also dipping bread into oil is so yummy. I love when you can do that at restaurants! I’ve never thought to add balsamic into it–I’ll have to give that a try!

    1. So weird right?! I thought it was the strangest thing haha. I’m just glad it was only a little snow.

      Try it with balsamic! At a restaurant in Florida over the summer they did that and it was so good. Definitely not something I would have thought of myself.

    1. I watched the original over the summer! I loved it. I feel like the chemistry was a little off in the characters during the first episode of the reboot but it’s grown back to normal in my opinion as I’ve gotten more into it.

  4. Hi Maureen! I saw the recipe for the Energy balls and I’m going to try them this weekend.

    My go-to lunch is salad. I just love them and I think they are so nourishing.

    On the other hand, if I had to have dinner by myself I’ll make myself a sandwich. I love cooking but sadly I’m too lazy to do it only for myself:(

    If I had to have dinner by myself and had a salad for lunch, I’ll certainly miss a warm hearty meal that day.

    1. Hey girl! You’ll have to tell me how you like the energy balls. I think you’ll enjoy them but I may be biased ๐Ÿ˜‰

      I love salads but I find it hard to eat during the winter. When it’s warm and sunny I have no problems scarfing down giant salads.

      Cooking for one can be so hard. I honestly never do it because portioning is something I find difficult. I hope you don’t have to have dinner by yourself anytime soon. Maybe next time you find yourself eating alone, you can cook extra the night before for leftovers!

      1. We are a nutfree school but since no staff are allergic to nuts we’re allowed them in the staffroom as long as we are sure to wash our hands really well!

      2. I’m just really picky lol. There’s a lot of food I don’t eat and some foods I only eat certain ways. For example – I’ll eat raw spinach but won’t touch cooked spinach because I feel like the flavor is weird.

      3. Lol I have preferences like raw carrots over cooked, but cooked broccoli over raw, but I already can’t eat enough foods due to allergies, so I’ll eat anything elee๐Ÿคฃ

      4. Uh it’s not hard to do when the other option is being violently ill. I would never do gluten or dairy free by choice- personally I think those people are crazy!! It’s too difficult!

      5. Okay that totally makes sense then. I can’t imagine how it feels to accidentally eat gluten or dairy for you! I think it’s unhealthy to take out things like that for long term unless you actually need to. Granted I have no medical training but that’s my personal opinion. I find those people to be crazy haha.

  6. The title of this post is some of my favorite carbs – when its just me for dinner, I tend to keep it simple – pasta, beans/rice, chicken sausage stirfry. Ed’s been traveling this week so I”ve had Hello Fresh all to myself!

    1. I recently (and by recently I mean October) had chicken sausage for the first time and it was delicious! I need to buy it next time it’s on sale at the store so thank you for reminding me. I hope you got extra delicious meals since it’s just you eating them this week!

  7. Isn’t it so weird how fast snow can come down?! It’s just so neat! I usually eat the same thing at lunch: either leftovers or soup and a sandwich! It’s just easy not to have to think about it, haha. That face mask sounds awesome! I want to do a face mask now, haha.

    My go to meal when it’s just me = eggs!!

    1. It is so crazy! Some days it comes done insanely fast and others it takes all day just to get an inch. It probably has to do with the type of snow too (light and fluffy vs heavy). I really like the face mask! You should totally throw a mask on right now.
      Eggs are delicious! I could eat them constantly I think.
