Friday Lunch Date

Happy Saturday! Are y’all excited for the weekend or what?! Personally I have a fun date with Alex planned and it’s going to be in the high 40s/low 50s which is perfect January weather to me. Have a great day 🙂


So my sleep was less than stellar. Some nights Alex will snore so loud that I end up moving to the couch. If you have any snoring remedies please help a girl out! I can’t figure out the reason why. Luckily I still got a good amount of sleep so I was set to go. For breakfast, I quickly scrambled eggs and made toast.


Alex was able to work from home yesterday so I decided to take my lunch break at home instead. It was nice to not only get out of the office for a bit but I got to see Alex too. That’s a win in my book! I had a peanut butter sandwich, carrots, hummus and pretzels. After we ate we watched half an episode of The Office. Is there a better way to spend a lunch on Friday?


Per my usual Friday routine, a trip to the grocery store was needed. When I got home and put everything away, I decided to get stuff for dinner ready. Minimal work was required which was great. I chopped up some brussel sprouts and got those in the oven to roast. Dinner came together fairly easily since we just through some brats on our George Foreman and heated up leftover mashed pototoes. When the brussel sprouts were done, I tossed them in equal parts balsamic vinegar and honey like I saw on Janae’s blog a few weeks ago. So good! You should definitely try it if you haven’t yet.


Post dinner involved some reading on the couch while Alex did a group project. Once that was all done it was movie night! We turned on the Pirates of the Caribbean: Dead Men Tell No Tales and made a big bowl of popcorn to enjoy. I sipped on a glass of wine as well because why not, right? The movie was long so we didn’t finish it since I started getting tired. We put everything away and then hoped into bed.

  1. Happy Weekend! Tonight I am celebrating my husband’s 30th birthday at an Irish pub in our city with friends. It should be a good time. For dinner last night, I had brown rice because I wasn’t that hungry and rice is always a good idea!! Love that you got to have lunch at home.


  2. We are getting some warmer weather here in Pittsburgh, too, this weekend and I am soooo pumped!! My remedy for dealing with snoring is ear plugs! I buy them in bulk and sleep super hard!! Yay for a lunch date with Alex! I bet that was such a nice switch up!

    For dinner last night, I had acorn squash soup and a pork wrap!


    1. I might find some cheap ear plugs next time I’m out! The only good part is it’s not every night which helps. It was such a nice switch up for a Friday!

  3. Dinner last night was about 18 different chilis. My church had a chili cookoff!

    As far as the snoring goes, +1 for the breathe right strips, but if those don’t work it could be sleep apnea. That problem is usually associated with older, less physically fit people but it also can be caused by a narrow airway. My wife couldn’t take my sporadic snoring, so I looked into it for her sake. I ended up with one of the CPAP Darth Vader breathing machines. It was funny when I went to pick the equipment up, they looked at me and said, “YOU have sleep apnea?” Yep.


    1. A chili cookoff sounds amazing! I would be in chili heaven.

      I’m probably going to get a pack of breathe right strips next time I go to the store. I didn’t even think it could be sleep apnea so if the strips don’t work then I’ll have to look into it. Crazy how you got it! You’d think runners wouldn’t be susceptible to it.
