Sunshine To Kick Off The Week

Hello friends! How was your Monday? The sun was out and it wasn’t freezing so I have to say it was pretty good based on that alone for me. I hope yours was just as good too. Have a great day 🙂


My alarm must have gone off when I was in the middle of deep sleep because I was sloooow getting out of bed. Man it was rough my friends! Eventually I got my butt out of bed and into the shower. I was behind with my typical schedule so I ended up eating the eggs and then I threw my muffin into the bag. Nothing like breakfast in the office.

During lunch, I started a new book. Today Will Be Different by Maria Semple was one I just stumbled upon at the library one day. Since I enjoyed, Where’d You Go, Bernadette by her I figured I would read another by Semple. The book is the story of Eleanor. She is the wife of John, a successful plastic surgeon, and mother to Timby. One day Timby fakes sick and Eleanor’s life slowly tumbles apart from her normal routine. I’m about 80 pages in and it’s good so far.


After work, the sun was shining and it was absolutely beautiful out! I had 6 easy miles on the agenda. I soaked it up and enjoyed nice and slow miles. I was able to run in short sleeves and capris. It was awesome!


For dinner, I tried a new to me recipe. Last week, Julie posted her family’s meal plan. One of the recipes was vegan sloppy joes from Minimalist Baker. I decided why not try them out so that’s what I made last night. No idea if it was actually vegan with our Worcestershire sauce but I tried haha. Our verdict was that it’s good and definitely a different texture than meat would be. Next time, I’ll add more spice to it (spicier the better!) and maybe do half lentils and half ground beef or ground turkey.

Once dinner was all cleaned up, we hung out on the class. I read a little more while Alex did some work on the computer. Then we watched an episode of the office to round out the evening.

  1. Yay for summer days and warmer weather! Our has still been awful, but tomorrow is finally supposed to be a bit better.


  2. I love that these muffins are still your go-to breakfast! I made them a couple of weeks ago as well since they sounded so good and we love them! I need to make more. So far, I just used blueberries, but I want to experiment with different fruits to mix it up. Thanks for the recipe, haha! 🙂


      1. Ooh I hadn’t thought of apples, but that sound like a great idea! Also, I definitely need to try them with strawberries. They really are a great little filler and it’s nice to know they are healthy. 🙂
