As I shared in yesterday’s post, I’ve been into fried eggs recently. The first few days I started making them, they turned out perfectly and were two distinct eggs. The past few days have been a different story… Now the eggs looks like a giant blob of egg which makes it hard to flip. At least it still tastes good!
Work was interesting because the morning absolutely flew by and then the afternoon dragged on. I thought it was almost time to go home at one point then realized it was only 2 pm and I still had 2 hours to go. To say I was dying to leave when the time came was an understatement!
I got home and quickly changed to head out for a super easy 3 mile run. The weather was a little grey and drear but it was a Friday so is any afternoon run a bad one? In my opinion it’s not. When I got home, Alex and Bailey were out on a walk so we all ended up getting home together.
For dinner, I heated up some leftover beef pilaf and made a Feeney family favorite side dish. It’s semi healthy because it has brussel sprouts but there’s also bacon in it so it’s a win on taste but maybe not so much health 😉 Both dishes are something I love so it was a tasty dinner and it was the perfect way to use up the last few brussel sprouts in the fridge. Alex and I watched an episode of Billions and The Office before calling it a night.
