Midweek Baking

Hello and happy Thursday! I feel like the first few days of the week flew by but at the same time I don’t remember doing much to make them go by so quickly. Does anyone else ever have those weeks? Hopefully the trend continues until work is over Friday. Have a great day 🙂


When I woke up Wednesday, I was ready to go which was refreshing. I think my body is finally adjusted to the time change. Even though it’s only an hour it can really mess with you when the sun isn’t rising until close to 7 am. I even had plenty of time to eat my breakfast. Earlier in the week it felt like I was a chicken running around with it’s head caught off.


A big chunk of my day was spent looking into a management class or a certificate as a personal development goal for 2018. If you have any insight on that I’d be so grateful! During lunch, I kept on reading The Knockoff. I’m really enjoying the story and change that it is from my typical thrillers and mystery novels.

After work I had to head back to Target. I managed to get everything on my list this time. Normally I wouldn’t make a midweek trip and just save it for the weekend but I needed liners for cupcakes since I had about 3 left. Major fail last time I went. Having a list and wanting to be in and out helped make the trip go quickly.


When I got home, I put on my apron and got to work. Well first I made a smoothie so I wasn’t starving but then I got to work. I followed this recipe for vanilla cupcakes. Since they are for a bacherlorette party this weekend, I didn’t taste the finished product. But the little bit of batter that I tried was so tasty.


Once the cupcakes were done, it was time for dinner. I heated up leftover soup from Sunday night and cut up the remaining bread as well. We ate and watching the last episode of The Crown. Since the third season will have a new cast in order to move forward in time, it was a little bittersweet watching the last episode. I ended up still being hungry so I grabbed a slice of bread and dipped it in olive oil and a little balsamic vinegar. We ended the night with an episode of The Office before heading to bed.

We Both Ran Today

Hi friends! I hope you’re checking in feeling a little more well rested today than yesterday. It’s currently snowing here in New Jersey but I’m hoping it stops soon. They’re claiming only about 3 inches so fingers crossed that’s all we get! Have a great day 🙂


When my alarm went off yesterday morning, I wanted to pretend I didn’t hear it and sleep the day away. Unfortunately a job doesn’t really lend itself to that. I dragged myself out of bed and got ready before breakfast. Not surprising, I had eggs and a muffin. Even though I was dragging, I didn’t make it to work more than 5 minutes late. I call that a win.


During my lunch break, I finished Daphne du Maurier’s My Cousin Rachel. The book was good. Towards the end it makes you think about what Rachel is really trying to accomplish with Philip (the narrator). Now I need to get my hands on a copy of the movie since I want to see how it all plays out on screen.


After work, I headed home to change and run. It was only 5 miles but 4 of it was speed so it felt hard during. Although the endorphins after were awesome. Alex got home from work while I was doing my circuits and got ready for a run. He’s using the app Couch to 5k to get into a more healthy lifestyle. So we both started the week with a good workout which is always nice.


Once I was showered and in pjs, I prepped some veggies for dinner. While broccoli and potatoes roasted, I made lunch for work and then got out the George Foreman to grill Italian sausage. By the time it was all done, I was ready to dig in! It all tasted really yummy.


While Alex cleaned up from dinner, I started on a new book. I forget what blog I first saw The Knockoff on but it seemed like a good break from my typical thrillers that I read. It’s the story of a magazine editor, Imogen Tate, who comes back to work and finds that a lot of the staff has been replaced with younger employees. With the internet and social media being used, Imogen has trouble finding her role in the magazine. I read for a while before heading to bed.

Long Runs And Cocktails

Hello! How was your Saturday? Mine was pretty good to be honest! I have nothing on the agenda for today aside from a Target run. Let’s be real though, the Target run will last me a solid hour at a minimum. I’m not complaining though. Have a great day 🙂


I got up and at em’ in the morning to crank out my long run. The run was a little intimidating to be honest. It was a 10 mile lactate threshold which is definitely the longest speed work I’ve done to date. After a 2 mile warm up, I had 2 x 5 minute at 8:45-8:55 pace (8:40, 8:39 actual pace), 3 x 3 minute at 8:30-8:45 pace (8:27, 8:29, 8:23 actual pace), 4 x 2 minute at 8-8:15 pace (7:55, 7:54, 8:04, 7:59 actual pace) and 6 x 1 minute sprints (7:06, 7:09, 7:40, 7:30, 8:02, 7:33 actual paces). I cooled down to 10 miles and my legs were dead after but I got my circuit training done. When I was inputting my times to the computer, I realized my average pace was a second faster than the pace I ran at my 10 race in October. That’s crazy to me!! I love seeing progress 🙂

Alex and I originally planned on grabbing breakfast sandwiches but the place was closed because of the storm earlier in the week 😦 Luckily his mom told us when we stopped by to drop off the shovels they loaned us to dig out our cars. We ended up going to our favorite diner. Even though it wasn’t lunch we both got grilled cheese. Post 10 mile run it was an amazing meal.


We got home and I took an epsom salt bath then showered before heading to the grocery store. It ended up being a quick trip which was perfectly okay with me. I read on the couch for a while before my stomach told me it was time to eat again. I quickly threw together a tortilla pizza and had it with celery and hummus. Alex and I watched an episode of The Office while I ate then I read the rest of the afternoon.


Alex’s parents invited us over for dinner so we headed there for a while. His dad made me a cosmopolitan which was a fun cocktail to sip on after an active day. We had tacos for dinner which were delicious! When we got home, I sipped on a beer while reading more of My Cousin Rachel.

An Easy Run And An Easy Dinner

Happy Saturday! What are you up to today? I was going to meet a friend for lunch but we had to reschedule. Now I have an open agenda and I don’t know what to do with myself haha. I’m sure I’ll find something fun to do though. Have a great day 🙂


Friday started off on an exhausted note. I have no idea why either! Maybe the shock of no power, a camp out in front of the fire, stuck car, last minute work from home and then a run in the snow caught up to me. That’s just a normal winter day in New Jersey though right 😉 Luckily I was ready to go by the time I was cooking breakfast. I had some scrambled eggs and an oatmeal muffin.


During lunch, I kept reading my next book. My Cousin Rachel by Daphne Du Maurier is a pretty old book and was published in 1951. I thought my grandma told me to read it so I grabbed it from the library. It’s about Philip Ashely whose cousin Ambrose dies a little under 2 years after marrying Rebecca. Philip thinks Rebecca had something to do with his death and now she is at his estate in England. It seems like it’s going to be a tale of deciphering the truth.

After work, a 5 mile easy run was on the agenda. It was nice and easy miles which was fine by me. Granted there’s snow on the ground and occasionally some wind but there’s been less people out recently. Due to that, the past few days have been really peaceful for runs. When I was about half a mile from the apartment, I saw Alex out! He’s currently doing the Couch to 5k app so we both got a run in today. Afterwards, I was really generous with all of my stretching and foam rolling.


Once I was showered and ready to go, I worked on dinner. Contrary to what I thought, chopping broccoli into small pieces for pasta is kind of a pain. But I wanted some sort of veggie with our meal so I can only blame myself. I cooked up some ground turkey while the pasta boiled. With about 3 minutes left on the pasta, I added the broccoli to cook. Topped with marinara sauce and parmesan cheese for a really simple and easy dinner.

Alex and I have a “rule” that whoever cooks doesn’t clean so I sat on the couch while he scrubbed all the dishes. If you don’t have this rule in your house you totally should. It’s so nice!! I read more while Alex got a fire going.

5 Easy Last Minute Meals

Hi hello! How are you all doing today? If you live in the Northeast I hope the storm didn’t hit you too badly. Last night we ended up losing power for 7 hours! Luckily we started a fire before it went out so we still had a heat source. We ended up moving our mattress in front of it when we went to sleep for a little camp out. Now my car is currently stuck in our parking lot from the snow and I’m working from home. Oh the joys of winter! Hopefully none of you are dealing with the same things I am currently.

Alex had a change of plans on Tuesday so he ended up being home for dinner. When we planned meals for the week, we originally thought leftover enchiladas would be on Wednesday. Then we ended up having those Tuesday night and it left me scratching my head on what to have last night. Granted we ended up having ham sandwiches but I planned on having ground turkey and spaghetti but not having power threw that plan out the window. I thought about something that’s easy to make but also healthy and filling. Since I can’t be the only one finds themselves thrown off their meal plan at some point, I put together 5 of our favorite go to easy meals when we find ourselves in that situation.

Turkey and Spaghetti


Both Alex and I are new to having ground turkey. By new I mean it’s only be consumed twice for us. But we both enjoy it! It’s healthier than ground beef and since it’s good to limit the amount of red meat you eat turkey is a great option. Pasta is always something in our cabinet and I try to always buy whole wheat so it’s healthier. Cook the turkey while the spaghetti cooks and you can even add in extra veggies you have lying around in the fridge or freezer to add extra nutrients. Top it with some marinara sauce once complete and you’re all set.

Burrito Bowls


Burrito bowls are amazing because it can be a catch all for whatever you have on hand. You can quickly cook up chicken, ground beef or turkey with some taco seasoning while rice is simmering away. If you have beans on hand then you can heat those up, cook some corn to add in. Personally I love topping mine with lettuce, black or refried beans, cheese, a little sour cream and salsa but they are so customizable and work with whatever you have in your fridge and cabinets.



It’s rare that there is not a jar of Trader Joe’s pizza sauce, mozzarella cheese and pizza crust in the freezer. All of the ingredients take so little time to defrost which is perfect when you’re in a rush. If you have some pepperoni then you can put that on (it’s Alex’s favorite) or load it up with a bunch of veggies. It takes me 15 minutes from starting the oven to cutting the pizza to have a meal on the table. Perfect for last minute dinners.

Tortellini, Veggies and Pesto


Tortellini is a delicious pasta and it’s a rare day we don’t have some in the freezer. Plus pesto is delicious so again we always have some in the freezer (do you see a theme here 😉 On it’s own you have a great dinner but if you want some more bang to it add in some chicken or veggies. I love peas with pesto and highly recommend you try that out. It couldn’t be easier because to cook the peas just put them in the strainer and dump the hot pasta on top when you drain it. Less dishes for the win!

Grilled Cheese


When all else fails, bread and cheese is there for you. My favorite cheese to use is White American and it will change the game for you. If you really want to treat yourself add some bacon to the sandwich as well. Bacon is always good right? To make it more substantial, add some cut up carrot and hummus and you’ve got yourself a meal.
