Our First Overnight Guest

Hello! How’s your weekend so far? Even though yesterday was fairly grey and it rained most of the day, overall it was pretty good. Right now the sun is shining so I have my fingers crossed it’ll stay out for a while. Have a great day ๐Ÿ™‚

On Saturdays, I have an alarm set for 6 am so I can get up an run. Apparently my body was done sleeping at 5:38 am since that’s when I woke up. I laid in bed a bit before deciding to just get up and run. It was raining again so I made sure to grab a hat and I’m so glad I did! For some reason, my watch said my first mile was a 7:58 which made no sense since I don’t think it was even a mile and I definitely wasn’t going that fast. The rest of the run was pretty good despite being wet. I ended up with 4 miles at a 9:09 average pace.


When I got home, I quickly turned on the Royal Wedding coverage to watch while I stretched and foam rolled. What did you guys think of Meghan’s dress? To be honest, I thought it was too simple! Now I know there are most likely rules regarding what they can wearing but Kate’s dress had lace when she married William. While watching, I was texting my mom all of my thoughts because I figured she was watching as well. We chatted back and forth. My baking skills need some work though because did you see the cake? Can you say gorgeous?

Chinese Takeout

For whatever reason, I wasn’t really hungry so I didn’t eat breakfast. It’s not worth it to make yourself eat if you aren’t hungry in my opinion. I ran a few errands before coming home to shower. Since it was raining still, I didn’t want to get dry and warm before heading back out so why not rock the post run look out haha. By the time I was home and showered though I was hungry so leftover Chinese for lunch was perfect.


I spent most of the afternoon reading on the couch. I feel like I’m at this really juicy part in the book now. If you enjoy historical fiction and novels that involve telling two different stories then you need to pick up Cathy Gohlke’s Secrets She Kept.


In the late afternoon, we ended to Alex’s parents house to pick up his twin sister Tory. She was coming to spend the night and is actually the first person we’ve had stay the night since we’ve been in this apartment! When we were driving back, I asked if she wanted to bake and she agreed. Tory picked a brownie recipe out and we got to work. The brownies smelled so good while they cooked and it was hard to not cut into them straight from the oven but we waited until after dinner.

Spaghetti and Meatballs

For dinner, we made spaghetti and meatballs. I use the frozen meatballs from Trader Joe’s and they are so good. I pop them right into the oven while frozen and let them bake for 30 minutes. While those were heating up, I made the noodles for us. In my bowl, I added marinara sauce, some cheese and fresh basil to it. Dinner was so tasty and perfect for a grey day!

After dinner, we all cleaned up and decided to watch a movie. We all decided on the recent Jungle Book movie. While it started, we all had some dessert. They turned out delicious and we all ended up having two. It was pretty good but I felt like little kids would find it kind of scary since the animals are more realistic than a carton. Overall it was good but I can’t compare to the original since I don’t know if I’ve ever seen it. Once the movie was over, we all got ready for bed.

Sunday In Pictures Vol. 31

Happy Monday! I hope you had a wonderful weekend. If you’re a mother, I hope you got spoiled by your children. Even though it was a grey and rainy weekend, we made the most of it by spring cleaning on Saturday and some time outside yesterday. This week it looks like it might rain most of it but I’m actually okay with it. The rain is washing away all the pollen that’s been killing me – I didn’t even take an allergy pill yesterday! We’ll ignore the fact that I woke up at 1:13 am in order to take on though… Hopefully the sun will shine for you this week. Have a great day ๐Ÿ™‚


Alex slept much later than Bailey and I so while we played, Iย  snacked on some strawberries.

Blueberry Waffle

For breakfast, we had waffles and bacon (not pictured).


I finally worked on my piping skills with the set Alex gave me for Valentine’s Day. Spoil alert – it was AMAZING. I kept commenting on how amazing and awesome it was lol.


Called my mom to chat a bit and to wish her a happy Mother’s Day. This was from exactly a year ago today at my graduation from Rutgers. Time flies you guys…


I made a tortilla pizza and paired it with a big salad for lunch.


We attempted some obedience training outside… It’s a work in progress but she’s got it in the apartment.


I made a key lime pie (from a mix )with whipped cream for dessert. The piping needs a little work but not too bad for a second try!


We went to Alex’s parents house for dinner. Steak, roasted potatoes and some asparagus for dinner before dessert and his mom opened gifts.

Spring Cleaning Day 2

Happy Sunday! I hope you’re having a great weekend so far. Happy Mother’s Day to any mom’s out there. Hopefully you all get to spend the day with people you love and are pampered just like you deserve. Have a great day ๐Ÿ™‚


When my alarm went off for my run yesterday morning I heard the rain outside. I desperately just wanted to stay in bed but I told myself that I had to run at least one mile. If the weather got worse or I just wasn’t feeling it after a mile I would come home. The rain was awful! By the end of the first mile my shorts were soaking wet. Soaking as in it felt like I peed my pants. I was so glad I threw on a rain coat before leaving to keep my shirt dry-ish. 5 miles for the day and I was very happy to come home to peel off all my wet layers.


Of course when I got home the rain stopped *eye roll*. I wasn’t going to trust that the rain would hold off so I threw on dry clothes and then drove right to the grocery store to get food for the week. Once everything was unloaded and put away, Alex and I headed out for breakfast sandwiches. He asked if I wanted a roll or bagel so I said surprise me. I got a bacon, egg and cheese with ketchup, hot sauce, salt and pepper on a roll. It was such a tasty breakfast for a rainy day.


When we got home it was time to get back to spring cleaning. This time we tackled the kitchen. I got to work on organizing all of the cabinets. I didn’t realize how much stuff got in them over the past year! After empty each cabinet, the counters were absolutely filled with stuff but I went through and got rid fo old food. All of the cabinets look so much nicer now that they’re cleaned out and organized.


For lunch, I made a ham and cheese sandwich and cut up a bunch of celery to have with hummus. The skies were grey but it wasn’t raining so we decided to take Bailey to the tennis courts to run around. She actually got fetch outside which was good! We’ll throe a ball in the apartment and she’ll play fetch but once we’re outside she’s normally way to distracted. Obviously sniffing every blade of grass near her is much more fun than playing fetch ๐Ÿ˜‰

Once we were home from playing outside, we headed back in to tackle the fridge and freezer. It’s crazy what random things you’ll find in the very back of your freezer! We had hot dogs that I honestly forgot that we put in there. Now that it’s cleaned out and organized I think we will be much better at using everything.


Alex met a friend at a driving range to hit some balls so Bailey and I hung out at home for a while. Unfortunately it started to rain so they had to finish early but that just meant I got dinner earlier ๐Ÿ˜‰ As an incentive to clean, we decided that we would get Mexican food from a place that recently opened in Princeton. Tacoria actually started at Rutgers in New Brunswick and has expanded to two other colleges in New Jersey. I always get the chorizo nachos and it’s amazing. The chips are covered in black beans, chorizo, cheese, a drizzle of crema (what they call sour cream), pickled jalepenos, and a little salsa.

After dinner, we decided to whip up some fun drinks. Alex had a pina colada and I had a margarita. We bought mixes at Target and for our first try it was pretty good! Our friend ended up coming over for a while and he was pretty impressed with our margarita skills too. It’s fun catching up with him since he grew up 10 houses away from Alex and now lives in New York City. When he left, we watched an episode of The Office before heading to bed.

Sunday In Pictures Vol. 30

Happy Monday! How was your weekend? Saturday was pretty busy for us but then Sunday was much more low key. Have a great day ๐Ÿ™‚


Started off our Sunday with bagels and bacon for breakfast.


Alex and I ran a few errands. I grabbed a new pair of sandals from DSW.


We grabbed Hoagie Haven for lunch. Not at all healthy but tasty for sure!


After a short nap to get rid of a headache, I went through my workout shirts. I had just a few…


We took Bailey to the tennis courts to run around and she made some new friends.


When we got home, she heard her new friends and just waited by the door for them.


Sunday nights are made for pizza.

We watched Shrek to end the weekend.

Running, Napping, Derbying, And Date Night, Oh My!

Happy Sunday! I’m coming at you a little late today since yesterday was packed pretty full. Have a great day ๐Ÿ™‚


I ran yesterday! For the first time in a week, I laced up my shoes and headed out. I didn’t have a plan at all and ended up getting 4 miles in. They felt hard though! I don’t knowย  if it was because I hadn’t run in a while or since it was hotter than it has been but man it was hard to get those 4 miles in. Even with that, I was glad to just get out and move.


When I got home, Bailey and Alex were still in bed so they got up and moving. We headed for a little family walk. Since it was nice, we ended up driving to some soccer fields to let Bailey run around for a while. By the time we made it home, we were hungry so breakfast was a must. I scrambled some eggs and Alex made bacon for us.


Once everything was cleaned up, we said goodbye to Bailey and went to do some shopping. We both needed a few clothing items and managed to pick up Mother’s Day gifts for both our moms so that was a pretty successful trip. When we got home, it was time for lunch. I used leftover BBQ chicken from earlier in the week and threw it in a quesadilla then paired it with some salsa verde. The salsa was necessary to tie the flavors together. I also had some carrots and hummus to munch on as well.

We watched an episode of The Office and somehow I fell asleep. I thought that was going to be the end of my napping but nope. I spent the entire afternoon napping on and off for some reason. I was a fairly productive though and went through all of my shorts to see what did and didn’t fit me. Then it was time to change and head out for a Kentucky Derby party.


Alex’s brother Tucker and his fiance Allison have a Kentucky Derby party every year. We headed over for a bit to watch the race. They had some mint julep for the Debry and margaritas for Cinco De Mayo which was cute. I snacked on some chips and salsa before the race. Alex and I had Firenze Fire and Enticed but neither horse even made it in the top 3 unfortunately so we lost in the little pool that happened. We said our goodbyes and headed to date night.


Alex made a reservation for us at this cute little Italian restaurant called Lola Restaurant. It was a tiny little place but super cute inside. When I looked at the menu nothing really jumped out to me unfortunately. But I knew whatever I ordered was going to be good and I was right. I ordered fettuccini pesto which had grilled chicken and sundried tomatoes in a pesto cream sauce. So good and I felt like I didn’t even make a dent in the bowl even though I ate a ton. Alex got the seafood combination with linguini in a white sauce and he really enjoyed his meal as well.


When they cleared our dinner plates, Alex asked for the dessert menu. We split the lava cake which was interesting. Normally I feel like the lava part is on the inside but they just put some fudge on top of the cake. It was still good just different to us though and the dessert plate was empty between the two of us haha. When we got home, we hung out with Bailey on the couch before going to bed.
