Sunday In Pictures Vol. 19

Happy Monday! How was your weekend? It was a good one for me and I’m feeling ready to take on the week! Is your office closed today? Alex’s office in the city is closed for President’s Day so I may have a mid day trip home in store. I haven’t decided yet so we shall see! Before that though, let’s review my Sunday in pictures in typical Monday fashion. Have a great day πŸ™‚

Queso crockpot chicken chili from Pinch of Yum for dinner! I made it on the stove top and it was so good! The only change I made was adding in two small chipotle peppers with adobo since they were in my fridge and I didn’t want them to go bad.

Belated Valentine’s Day Date

Hello and happy Sunday! How is your weekend so far? Today I’m checking in with a full heart and belly. Yesterday was busy in a good way for me. I hope you’re having a great weekend!

Saturday started nice and early at 6:15 so I could get an early start on my long run. After less week’s less than stellar 8 miles, I decided to take it just one mile at a time this week. From the first few steps, I could tell it would be a good one. 8 easy miles at a 10:03 pace to start the day! I saw one other person the entire time I was running and they were walking there dog. It was awesome to get be alone in the early morning, anyone else feel that way about weekend runs?

When I got home, I stretched and foam rolled before hopping in the shower. I had to go grocery shopping so I made some scrambled eggs to get something in my stomach before heading out. I didn’t want to over buy because I was hungry. By the time I got home, put all the groceries away and read a long chapter in my book it was time for lunch. Alex and I decided to use some coupons at Subway to get some sandwiches before we both ran more errands. I got a turkey sandwich with pepperjack cheese, lettuce, spinach, green peppers, cucumber and pickles plus a little mustard and chipotle sauce on it. Delicious and filling before getting my hair cut.

I got home from my appointment and tried to touch my hair as little as possible ha! The woman who cut my hair blow dried it all nice and I didn’t want to ruin it so I made some tea and read on the couch. I ended up finishing Celeste Ng’s novelΒ Everything I Never Told You. It’s the story of a Chinese American family in the 1970s who live in a small town in Ohio. The middle child, Lydia, is found dead in a lake. As one would expect, the family dynamic changes as each of member has to grasp with their new reality and learn to accept what happened. Overall it’s good. All of the themes are very hidden and subtle which I enjoyed. Personally I don’t love in your face themes. A great family drama read if you are interested in dramas.

Finally it was time to get ready for our date! Alex and I decided to celebrate Valentine’s Day a few days late instead of on the 14th. We opted for a new to me Italian place (Alex had been there before and enjoyed it) so I was pretty excited. I got all dolled up and made him take a picture before we left.

The food was so stinking good you guys!! When we arrived, they put a little plate of bread with some red sauce on top to start us off which was awesome as we sipped on our wine. It was BYOB so I grabbed a bottle of white earlier in the day. Once we placed the order for our entrees, the waiter came back with this plate full of an awesome light fluffy bread thingy that was on the house last night. We dined on that and some spicy calamari (I eat only the super breaded pieces). Finally the entrees…yum. I ordered the pappardelle alla vodka which was pappardelle pasta sauteed with prosciutto in a vodka cream sauce and Alex had the linguine scoglio which came with shrimp, mussels and clams in a garlic, olive oil and white wine sauce. We both kept complimenting the food the entire time.

We decided to splurge and split a dessert. The 3 chocolate mousse was so good! It was milk and white chocolate mousses topped with a light and creamy dark chocolate. Then the plate had some melted chocolate and whipped cream to eat as well. I wish I had another piece as I type this… The rest of the night was spent in front of a fire (it randomly starting snowing a ton!), exchanging gifts and hanging out. It was a fantastic Valentine’s Day date to me πŸ™‚

Yesterday was Alex’s dad’s birthday so for dinner, he chose steak (and lobster tail which I didn’t eat), mashed potatoes and asparagus.

For dessert, we all dug into my chocolate cake with chocolate whipped cream frosting.

A Going Away Party

Happy Sunday! What is the weather like by you? It started off sunny yesterday but then turned grey and rained on and off. According to the weather report it’ll be raining all day again. But that’s okay! It just means it’s appropriate to stay inside reading and baking all day right?! I hope the sun is shining by you and that you have a great day πŸ™‚

When I woke up yesterday, I was ready to run. Unfortunately the run was less than fun but that’s okay. Not every run will be amazing and that’s okay! I got out there and ran 8 miles at a 9:27 pace. I walked into the apartment in a not so great mood but found Alex laughing on the couch to this video. It’s a 98 year man who finds out how old he is and it’s the cutest and funniest thing ever! Just a warning that there are curses in it. Alex and I both said we hope to be as careless as that man when we are older.

After a shower, I got settled on the couch to finishΒ Big MagicΒ by Elizabeth Gilbert. This book was hyped up online so I wanted to try it out. I felt like it wasn’t so much about how to live your best creative life but how she lives hers. Maybe that’s the whole point of the book and I was just expecting something different though. She made creativity seem like this giant part of your life that is almost a religious type part of our lives. I personally don’t believe that creativity is like religion but I do think it’s important. That’s just my opinion on the book though! If you like it then that’s great.

We had a few errands to runs with a stop at the library and some cards to pick up. While out, we grabbed some lunch. I had a buffalo chicken wrap that had lettuce and a little American cheese in it. It was delicious! I haven’t had a buffalo chicken wrap in forever which is shocking so it really hit the spot. Plus some sour cream and onion chips to finish off the meal because they sounded good so Alex and I split a bag.

When we got home, I grabbed a new book. I’ve read of few of Liane Moriarty’s novels so I grabbedΒ Truly Madly Guilty. Then I meant to take a super quick cat nap of 12 minutes…and ended up sleeping for at least 30 minutes. Sorry not sorry! I started to type up this post while watching the Olympics. Snowboarding was on and man are those guys talented! 3 full rotations is considered “very pedestrian” for them… how crazy is that?! #3 rotations is almost too easy for them.

One of Alex’s lifelong friends is joining the army and leaves Monday for basic training. Some people got together as a going away dinner. We all met up atΒ The Alchemist and BarristerΒ in Princeton. Since it was raining, I thought people would stay home but there were a lot of people out. We didn’t have to wait though even with a group of 9 people which was good. For dinner, I had the Dublin spring rolls which is technically and appetizer. It’s shredded corned beef, sauteed cabbage, carrots and scallions. It came with a Guinness mustard that was really good. It was the perfect size to make me full but not over the top full.

Everyone chatted over drinks and food. Around 10:30, we all said goodbye and got home. Alex and I put pjs on, caught up on the Olympics (yes the bar had it on but it’s not the same), and watched The Office before heading to bed.

Sunday In Pictures Vol. 17

Happy Monday! Who watched the game last night? The game was fantastic and had us stressed (we aren’t even huge football fans!) but we’re happy with the outcome. This is probably an unpopular opinion but I wasn’t wowed by the halftime show. The commercials were eh as well. Now I’m just waiting for the tired feeling to set in from such a late night. I feel like the Super Bowl always makes me so tired the next day. Not going to lie, it could definitely be because I ate pretty unhealthy but whatever. One night a year is worth it! Have a wonderful day πŸ™‚

I’m not even doing my taxes this year (thanks Dad!) and this is how I feel just from collecting all of my documents together. Graduating college and having 3 jobs is not joke when it comes to taxes!
