Nice And Slow Miles

Happy hump day! Half way through the week already. How has your week been thus far? I hope it’s been a good one. Have a great day 🙂

Yesterday started a little earlier than normal when Alex’s alarm went at 4:45. He had a work event in the city so he had to catch a 6:15 am train. I got to sleep in a little later until my normal alarm went off. Once I was ready I headed to the kitchen. I grabbed some waffles out of the freezer and popped them into the toaster oven to warm up. When they were done, I topped it with some peanut butter and chia seeds for breakfast.

I ran out at lunch to pick something up at the tailor’s. That only left me with about 30 minutes of reading once I got back while I ate. I know, 30 minutes is better than nothing but I love that hour in my day to take a long break from work and just escape into my book. “Fried Green Tomatoes at the Whistle Stop Cafe” just got to a really good part and all I wanted to do was spend the rest of my day reading.

Once I was changed, I heading out on my 4 mile run. This time it was actually at a recovery pace which was awesome! I feel like these runs always feel the hardest for whatever reason but I know they are important so I try not to push the pace. Key word being try 😉 When I got home, I stretched and foam rolled before taking a quick shower.

Alex got home shortly after I got back and we were both pretty hungry. We got out leftovers from the fridge and heated a bunch up for our dinner. I put potatoes, shredded chicken, a little cheese and hot sauce into a bowl. To get some veggies, I put roasted brussel sprouts and broccoli onto a plate.

Once dinner was cleaned up, I worked on my next DIY Christmas gift. Guys they are turning out so cute! I will have a post up next week with how to do them all so be on the look out for that if you are interested 🙂 Before fully cleaning up, I made some overnight oats so they could set in the fridge overnight.

After that was all done, I curled up on the couch while burning a candle. Alex turned on “Bad Santa” which I had never seen before. I don’t really recommend it. It was pretty bad in my opinion and we didn’t even finish it.

Lunch At Home

Happy Tuesday! How was your Monday? I hope your week started off on a positive note. Have a great day 🙂

At some point, I woke up in the middle of the night and was really confused on what day it was. When my alarm went off, I was not at all confused.  I got ready and was had ample time to eat breakfast. A few weeks ago, Laura from Laura Likes Design, posted about how she gets dressed with purpose everyday and sets everything out the night before. I’ve been doing that for a few weeks now and it helps me so much in the morning. I don’t even have to open drawers or the closet! For breakfast, Alex and I had scrambled eggs and bacon.

During the morning at work, I realized I didn’t plug my Garmin in to charge. Alex suggested that I go home during my lunch break to plug it in. I figured since we only live 10 minutes away then why not. The perk of forgetting to plug my watch in was being able to read on the couch instead of at my desk. Win!

When work ended, I ran home and got changed before heading out the door to run. My workout was 4 x 1200m repeats. I wasn’t sure how these long repeats would go but I felt pretty good and each one got faster, woo! My splits were 6:22, 6:12, 6:12, and 6:04. I decided to finish my cool down in our parking lot since there was a car parked in the parking lot at the park I ran at. It creeped me out a bit (thank goodness I always bring my phone with me) so it’s always better to be safe than sorry especially now that it gets dark so early. A total of 6 miles for the night at a 9:25 pace.

After my run, I stretched and showered before getting dinner ready. I put some veggies in the oven to roast but when Alex and I saw how big the wraps were once we put them on our plates, we threw the veggies in a container and put them in the fridge. It wasn’t worth it to stuff ourselves just to get a few extra greens in. Dinner ended up just being buffalo chicken wraps. I used shredded buffalo chicken from the crock pot, cheese, and lettuce on a whole wheat wrap.

Post dinner clean up, I worked on my first of 3 DIY Christmas gifts. These are all for Alex’s family since making a craft and traveling on an airplane would not end to well. We decided to gift a red pepper infused olive oil as one of the gifts. It was so simple. Is this something you guys would like to see a post about? If so, please let me know! I would be more than happy. Once it was done, I put it in a glass container I found at Home Good for under $4. I tied a ribbon and viola! a simple addition to the gift we are giving.

I ended the night by curling up on the couch to read more. I’m really enjoying “Fried Green Tomatoes at the Whistle Stop Cafe”. It’s taking me a little longer than normal since it’s 1) not a mystery/thriller novel and 2) when a good holiday song comes on Pandora I end up singing along. After a while, I ended to bed.

Question of the day: Alex and I are having a couple over for dinner on Saturday and I’m stumped on what to make. Any suggestions would be much appreciated!

First Snow Of The Season!

Happy Sunday! Did it snow by you yesterday? It feels like a bunch of different areas in the US woke up with snow on the ground the past few days. Have a great day 🙂

Yesterday was supposed to start a 6:30 am but when my alarm went off, I didn’t get up. I was still pretty tired so I opted for extra sleep instead of heading out bright and early for my run. I eventually got out the door a little before 9 and did 5 miles. I was a lot faster than what I intended my pace to be (oops!) and blame it on this being my second run in 6 days. During the beginning of my run, there were random flurries or snow but it picked up during the last 2 miles.

When I got home, Alex was helping his dad hang Christmas lights at his parents house so I stopped by to “help” (aka stand there while they worked) before heading to Target. I was on a mission to find ugly Christmas sweaters for my family’s Christmas Eve celebration. Luckily I found some good ones for both Alex and I while there. On my way home, I grabbed takeout for us for lunch. Cheesesteaks were a warm and filling meal on the snowy day. Plus some cheese fries because a certain boy called the order in…

The snow continued for most of the day and we got a decent amount for the first snow of the season. I took the above picture around 2:30 pm and it was still snowing! Driving made everything so pretty and white. I actually love driving in the snow when it’s falling since 1) most people don’t want to drive and 2) everything is undisturbed so it still looks nice.

I spent the afternoon reading on the couch and enjoying some tea. While reading, I lit my latest candle that I got from Home Goods. It’s White Cedar by Village Candle and it smells like a Christmas tree. If you have a Home Goods/TJ Maxx/ Marshalls near you go and check to see if this candle is in stock. It’s a huge jar and I spent about $10 on it which is an awesome price for such a large candle.

For dinner, I grabbed a pizza crust out of the freezer. We topped it with pizza sauce from Trader Joe’s (seriously the best sauce ever!), mozzarella cheese, and a sprinkle of red pepper flakes. 10 minutes in the oven and it was done. So much better and cheaper than take out pizza.

After dinner, we hung out by the fire and chatted for a while. Alex had a group meeting for a final project for his semester so we didn’t want to start a movie or anything. While he worked on his project, I watched the snow fall, typed this post (as I type this at 9:20pm, we have about 6 inches on the ground) and read “Fried Green Tomatoes at the Whistle Stop Cafe”.

Is It 4 PM Yet?

Happy Saturday! I don’t know about you but I am so happy it’s the weekend! New Jersey is supposed to get some snow today which is exciting and perfectly aligns with my desire for a lazy day. Have a great one 🙂

Since I got home at 1:30 am, I opted to sleep in instead of going into work at my normal time. Don’t worry, my boss said it would be okay since I had some crazy hours this week. I woke up at 6:45 and figured why not take advantage of going in late to get my run in. After not running all week, it felt so nice to get outside and move! I did 3 miles that were supposed to be easy but my legs had some energy so they were a little too fast to be considered recovery miles.

When I got home, I stretched and foam rolled. I was hungry so I grabbed a handful of dried baby sweet pineapple from Trader Joe’s. This stuff is delicious! You should pick it up because it’s almost like a healthy fruit snack. The only ingredient is pineapple so while some may say it’s high in sugar, that’s all naturally occurring so I don’t mind at all. I snacked on it while I got ready.

As I have previous said, my coworker brings in donuts every Friday. I don’t usually have one but yesterday I did. I figured why not give yourself a pat on the back for showing up to work right 😉 Since I got there a little over 2 hours late, there weren’t a ton of options but I picked one that was gingerbread and it was pretty tasty.  Even with showing up late, I felt like I spent the whole day counting down until 4 pm when I could finally head out the door. Luckily my boss let me leave early, woohoo!

I recommend not going to the grocery store the night before it’s supposed to snow. My normal Friday grocery routine takes about 30 minutes total but it took over an hour yesterday. It was as if the forecast called for 3-6 feet instead of the 3-6 inches that was forecasted. Although I did meet an old man who started talking to me about Rutgers and Alex which was interesting. When I got home, I was so happy to close the door to our apartment for the night.

Alex and I caught up on the week since getting home at 1:30 am wasn’t exactly optimal chatting time. We hung out on the couch and I started my next book. During work at lunch, I finished “Death at the Door” and would honestly say just skip it. The outcome was really predictable and I wasn’t as grabbed as I thought I would be in the book. I was more than happy to pick the last book from my library pile: “Fried Green Tomatoes at the Whistle Stop Cafe” by Fannie Flagg. This book was actually recommended to me by Alex’s grandma! I’ll give a review when I read a little more.

I was in no desire to cook last night so I grabbed a pot and boiled some water. Tortellini and ravioli are two prepared foods that Alex and I try to always have in our freezer. Sometimes we have both while others just one. I grabbed a bag of tortellini and threw it in the boiling water. Once it was done, I drained it then put the pasta back to cover in pesto sauce. Viola! Dinner was complete and delicious! I opted to top it with a little parmesan cheese for a little something extra.

To end the night, we (and by we I mean Alex) got a fire going and we curled up on the couch. We watched “The Polar Express” which is such a cute movie. Plus Tom Hanks is a voice in it and he’s my favorite actor. When the movie ended, we enjoyed the fire a bit longer before heading to bed.

Knocking Off Christmas Movies

Happy Sunday! How is your weekend so far? Yesterday was fairly relaxing which is just what I wanted. I hope you have a wonderful day 🙂

Saturday started off with a 6 mile run. I unintentionally turned it into a progression run and got faster every mile (oops!). With an average pace of 9:47 (the goal was 9:45-10:30) I did fairly well. The last two miles were a 9:37 and 9:34 pace which is awesome. Slowly making the long runs get faster, woohoo! Side note, does anyone else skip gloves and just pull their long sleeve over their hands to keep them warm?

When I got home, Alex was still in bed so I stretched and foam rolled while we chatted. Apparently I stuck (tmi?) because Alex said I should shower. Ya know, because I totally planned on going around in my sweaty running clothes all day 😉 After getting dressed, I got some food in my belly that Alex cooked for us. Bacon, eggs, tea and a glass of milk was the perfect fuel to get me ready for the day.

I basically ran out the door after eating to make it to the nail salon on time. For Alex and his twins birthday, her gift was that I would take her to get a manicure as my treat. This was the first time the three of us (their brother’s fiance joined us) were able to go. His sister was so excited to have a mini girls day and it was a great way to relax and chat without his parents or brothers around. I opted for a semi-dark purple from CND. I don’t know the name of it since the salon I go to just numbers them, sorry!

Afterwards, I came back to clean up from breakfast and tidy the apartment. Alex was out getting his car reregistered and once that was all complete we were both hungry. We headed out for lunch and planned on getting Subway but somehow ended up at a pizza place. Any guesses on who was driving?! None of the specialty pizzas were up my alley (picky eater problems) and they had no plain cheese (how?) so I just got a slice of pepperoni and a slice of sausage. Long story short I should’ve just gotten a side salad instead of the sausage…Apparently it’s easy to mess up a simple slice, even if I’ve had it before and it was good.

After lunch, I headed to Target. We needed some more hot sauce for dinner and Christmas gift bags. I found a ton in the dollar section that were in packs of two for $1 and super cute! I picked some of those up then came home to wrap Alex’s family’s gifts. Now we have actual presents under the tree instead of fake ones.

Once wrapping was all done, I got on the couch to read more of “They Both Die at the End”. I’m liking it a lot so far and am curious how the plot thickens. Random characters are getting added in and I have a feeling a bunch of these small people’s stories are going to converge.

For dinner I made buffalo chicken dip! I noticed on the Frank’s Red Hot bottle there was a recipe. Alex and I figured it would be good and decided that would be dinner. I didn’t have all the ingredients so I modified it to fit what we did have. The recipe is below if you’re interested 🙂

After dinner, we knocked another movie off our list! Alex had never seen “A Christmas Story” all the way through so that’s what we watched. Such a classic movie that everyone needs to see. When the movie was over, Alex asked if I wanted to play a video game so I said yes. We spent the rest of our night listening to Christmas music and killing zombies.

Buffalo Chicken Dip

Ingredients:

1 package (8 oz.) of cream cheese, softened

1/2 cup Frank’s hot sauce (or hot sauce of your choosing)

1/3 cup shredded cheddar cheese

1/2 cup shredded chicken

Directions:

Preheat oven to 350 degrees.

In bowl, mix together all of the ingredients with a fork. If you want, add some extra hot sauce and/or shredded cheese.

Place in a 1 quart baking dish and cook for 20 minutes.

Let cool slightly (so you don’t burn your tongue) and serve.
